About the Recipe
Ingredients
2 boneless, skinless
 chicken breast  Â
1/2 cup chopped red onion
1 tbsp rice vinegar
1 cup minced scallions
1/4 cup chopped flat
leaf parsley
1/2 cup dried cranberries
1/2 cup mayonnaise
2 tbsp plain Greek
yogurt
1/4 cup mustard (mix with 1 tsp honey)
1/4 cup toasted almonds
salt & pepper to taste
Preparation
Step 1
Dice cooked chicken breasts and place into a medium mixing bowl. Lightly coat red onions with rice vinegar and then add to the bowl.

Step 2
Stir scallions, parsley, and cranberries into the bowl to combine, then fold blueberries in gently.

Step 3
In a small, seperate bowl add mayonnaise, yogurt, and mustard. Blend thoroughly, then fold dressing into the salad. Garnish with toasted almonds. (Add salt and pepper to taste).
