Indulge in a hearty and wholesome meal with this Slow Cooked Chicken, Kale, and Sweet Potato Soup recipe. Packed with nourishing ingredients, this soup is both comforting and nutritious. Simply combine chopped sweet potatoes, thinly sliced kale, chicken breasts or thighs, chicken stock, salt, and Italian seasoning in a 6-quart slow cooker. Let it simmer on high for 4 hours or low for 6 until the sweet potatoes are tender and the chicken is cooked through. Then, shred the chicken, return it to the slow cooker, and give everything a good stir. Adjust the seasoning to taste, and serve piping hot with a drizzle of extra virgin olive oil for added flavor. Perfect for cozy nights in or busy days when you need a wholesome meal ready to enjoy!

Ingredients

  • 2 large or 4 small sweet potatoes, peeled and chopped into pieces


  • 1 bunch of Kale, stems removed and thinly sliced (2 packed cups)


  • 1 lb. chicken breasts or thighs


  • 64 oz. chicken stock


  • 2 tsps. salt


  • 1 tsp Italian seasoning


  • Extra Virgin Olive Oil, to serve


Preparation

Step 1


Place all the ingredients in a 6-quart slow cooker, stirring to combine.



Step 2


Cover and cook on high for 4 hours or low for 6, or until the sweet potatoes are tender and the chicken is cooked through and very tender.



Step 3


Remove the chicken and shred with two forks. Return to the slow cooker and stir to combine.



Step 4


Taste and add additional salt to taste. Serve hot with a generous drizzle of olive
